Chef Andy worked for several curry house in England before moving to United States. Americans are not used to British curries and Chef Andy wants to get that flavour to North America throught "The Balti House" The house of orginal curries. Balti is a type of curry served in a thin, pressed-steel wok called a "balti bowl".
Birmingham, England lays claim to being the birthplace of Balti cooking and no one seems to be arguing. Balti in Birmingham arrived the mid-1970s, created by the city's Indian population. Traditional curry flavours like tikka masala, tandoori, rogan josh, korma can all be cooked in a Balti style. Another requirement is for all meat to be "off-the-bone" to allow it to be cooked quickly over the hot flame.
